Rabbit in parts with eggplants
Preparation:
cut the eggplants into pieces, salt them and let them drain to remove excess liquids. Brown the rabbit in oil and butter, add salt and pepper.
Dry the eggplants with a cloth and, when the rabbit is well browned, add them along with the garlic.
Let it flavor for a few minutes, then pour in the tomato and cook on a low heat. If necessary, add a little water from time to time.
