In a baking dish, melt the butter and add the pieces of rabbit and the bunch of aromatic herbs; brown them well on all sides and adjust the salt. Meanwhile, in warm water, let the mushrooms rehydrate for 20 minutes.

Flour the meat, add the squeezed and chopped mushrooms, moisten with the wine. Cover, cook on low heat for 1 ½ hours and, occasionally, check the cooking adding, if necessary, some broth.

At the end of cooking add the chili pepper and let it flavor for a few minutes; then remove it along with the bunch of aromatic herbs.

Strain the sauce, add the capers and the chopped anchovy; mix and pour the hot sauce over the rabbit pieces. Serve immediately.
