Rabbit Skewers
Preparation time: 1 hour and 30 minutes
Servings: for 4 people
Preparation:
Add a leaf of sage to each slice of rabbit and roll it up with a slice of bacon; thread the rolls onto metal skewers, adding more sage between each slice.
Place the skewers in a pan with three tablespoons of oil, the vinegar and water and bake in the oven for an hour at 175° C.
Sprinkle them with white wine as soon as they are colored and add a tablespoon of water, occasionally. At the end of cooking, serve them on a serving dish with parsley and lemon wedges.
