Yogurt Sauce
Let's start with the preparation of the yogurt sauce. Cut a lemon in half and squeeze it. Chop some previously washed chives and add them to the yogurt, along with the lemon juice, mayonnaise, salt and pepper. Mix everything and cover with cling film before storing in the refrigerator.
Paprika Marinade
Let's move on to the marinating of the chicken wings. Break and beat some eggs in a deep dish, adding a pinch of salt, a grating of black pepper, the two types of paprika and a bit of ketchup. Mix all the ingredients well.
Breading Chicken Wings
It's time for the breading of the wings. In a dish mix the breadcrumbs with a bit of paprika (sweet or smoked, depending on your taste), and in another dish put some flour. Pass each chicken wing first in the flour, then in the marinade and finally in the breadcrumbs. Arrange the breaded wings on a baking tray lined with parchment paper.
Frying and Plating
Let's proceed with the frying. In a high-sided pan, pour some seed oil and bring it to a temperature of 170°. Immerse the chicken wings and fry them for about 10 minutes or until they are well browned. At the end of cooking, drain them on absorbent paper.
Finally, let's proceed to plate. Pour the yogurt sauce into a small bowl and garnish it with some chopped chives. Place the chicken wings next to the sauce and serve. We can sprinkle some chives on the chicken wings to make the dish even more appetizing.
