3 slices of stale bread

In a bowl, put the stale bread and soften it by soaking it in a drop of milk. After washing them and removing the ends, cut the zucchini into strips using a grater with large holes. Cook the zucchini for about 10 minutes in a non-stick pan with a drizzle of extra virgin olive oil.

Chop the chicken breast and, in a bowl, combine the cooked zucchini, the chopped chicken, the beaten eggs, the grated Parmesan, a pinch of salt and the bread. Mix the ingredients well to form many meatballs that you will pass in the breadcrumbs.

Place the meatballs on a baking sheet covered with parchment paper and drizzle with oil. Bake in a preheated oven at 180°C for about half an hour until golden brown.

Now prepare the sauce: take the tomato juice and season it with oil and salt. Blend the seasoned tomato juice with the cucumber and garnish with fresh oregano. Your chicken and zucchini meatballs with light sauce are ready to be enjoyed. Bon appetit!
