3 Extra Fresh Free-Range Eggs
150 gr of brown sugar
270 gr of coconut flour (add if necessary)
Zest of 1 untreated lemon

Separate the yolks from the whites

We start by breaking the eggs and carefully separating the yolks from the whites.

Whip the egg whites

Now we take the egg whites and start whipping them with the help of electric whisks. When they start to become denser, we add the sugar little by little. We continue to whip until the sugar is completely incorporated.

Combine all the ingredients

We set aside the whisks and start incorporating the coconut flour, a little at a time, using a spatula. We mix with gentle movements from top to bottom, to maintain the structure of the whipped egg whites. We also add the grated lemon zest.

Bake the cookies

Once we have a soft mixture, we take a baking tray lined with parchment paper. Using a spoon, we form balls and place them on the tray, keeping a certain distance between them as they will tend to puff up slightly during cooking. We bake the cookies in a preheated oven at 180°C and cook for about 8-10 minutes. We serve the cookies in a wooden bowl and, for an extra touch, we decorate them with a few mint leaves.
