The Recipe

Today we will see the recipe for a delicious carrot and yogurt cake, a perfect dessert for a snack or a greedy breakfast. We will accompany you step by step in every necessary step for its success: we are sure that the result will surprise you.

3 Extra Fresh Large AIA Eggs
3 carrots
125 g of whole yogurt
180 g of sugar
80 g of butter
250 g of 00 flour
Cinnamon powder as needed
1 sachet of baking powder



Boil the carrots

First of all, we peel and clean the carrots carefully. Then we bring a pot of water to a boil, take the peeled carrots and boil them for about 5 minutes.


Drain, cut and blend the carrots

Once boiled, drain them, cut them in half and put them in the blender.


Separate the yolks from the whites

Now it's the turn of the eggs. With a little care, we separate the yolks from the whites.


Whip the egg whites separately

We put the yolks in a bowl, take the egg whites and whip them separately.


Add sugar to the yolks and whip together yolks and sugar

In the bowl of yolks we add the sugar and whip until we get a nice frothy mixture.


Prepare the mixture

Now we prepare our mixture: we add to the just whipped yolks the yogurt, the melted butter, the chopped carrots and the cinnamon powder. We also add the sifted flour and the baking powder. We mix carefully until we have obtained a uniform mixture.


Incorporate the egg whites into the mixture

We take the egg whites set aside earlier and add them little by little to the mixture.


Put the mixture in a cake tin and bake at 180° for 40 minutes

Now all that remains is to bake the cake. We start by buttering and flouring a cake tin, then we gently pour our mixture. After bringing the oven to 180° degrees, we bake the cake for about 40 minutes. 
We're done! We serve the cake to our guests with a pinch of icing sugar to make it even more delicious.
