Rabbit Skewers

Preparation:

Add a leaf of sage to each slice of rabbit and roll it up with a slice of bacon; thread the rolls onto metal skewers, placing more sage between each slice.

Place the skewers in a pan with three tablespoons of oil, the vinegar and water and cook in the oven.

Spritz them with white wine as soon as they are colored and add a tablespoon of water, occasionally. At the end of cooking, serve them on a serving dish with parsley and lemon wedges.
