Preparation:
In a baking dish, melt the butter and add the rabbit pieces and the bunch of aromatic herbs; brown them well on all sides and season with salt. Meanwhile, in lukewarm water, soak the mushrooms for 20 minutes.
Lightly flour the meat, add the squeezed and chopped mushrooms, and deglaze with the wine. Cover, cook over low heat for 1 hour and ½, and from time to time check the cooking, adding broth if necessary.
At the end of cooking, add the chili pepper and let it flavor for a few minutes; then remove it along with the bunch of aromatic herbs.
Strain the sauce, add the capers and the chopped anchovy; mix and pour the hot sauce over the rabbit pieces. Serve right away.
