Rabbit skewers
Preparation:
Place a sage leaf on each slice of rabbit and roll it up with a slice of bacon; thread the rolls onto metal skewers, adding more sage between each slice.
Put the skewers in a saucepan with three tablespoons of oil, the vinegar, and water, then cook in the oven.
Sprinkle with white wine as soon as they start to brown, and add a tablespoon of water from time to time. When cooking is finished, serve on a serving platter with parsley and lemon wedges.
