Cook the AIA rabbit in pieces in a pot like this:

Preparation: 
cut the eggplants into small pieces, salt them, and let them drain to remove excess liquid. Sear the rabbit in oil and butter, add salt and pepper.
Pat the eggplants dry with a cloth and, once the rabbit is well browned, add them along with the garlic.
Let it flavor for a few minutes, then pour in the tomato and cook over low heat. If necessary, add a little  water from time to time.
