280 g of rice noodles
1 hot pepper
5 tablespoons of soy sauce
1 clove of garlic
400 g of fresh spinach
50 g of shelled peanuts

Description

Practical to prepare and good to take around, the jar salad with rice noodles and chicken is a fusion recipe that combines Italian and Asian flavors. The jar salad is convenient to shake to be perfectly seasoned and is ideal to replace the classic lunch box for lunch at the office!

First of all, cut the chicken into pieces and put it in a bowl to marinate with the soy sauce, a piece of chili pepper and rice vinegar. In the meantime, boil the rice noodles following the instructions on the package. Drain the noodles, rinse them with cold water to stop the cooking and season them with a drizzle of oil to prevent them from sticking.

In a pan, heat a drizzle of oil and fry the garlic clove, add the spinach and sauté quickly, then set aside. Drain the chicken from the marinade and put it in the same cooking pan as the spinach.

Cook the chicken for a few minutes, then add the marinade, mix and cook for 10 minutes on low heat. Once the chicken is ready, add the roughly chopped peanuts and the parsley.
