Description

The light chicken salad is a very popular summer recipe, although, being very tasty and easy to make, it is perfect for all year round.

If you are on a diet or do not want to weigh yourself down with overly elaborate recipes, light chicken salad is the ideal solution!

Procedure

To make the light mayonnaise, pour the soy milk (about 50 ml of milk) into a container, gradually add the oil (about 100 ml) and constantly stir with a whisk. When the mixture has thickened, add a few drops of lemon and a pinch of salt. Discover the easy and quick recipe for the best light chicken salad of all time!

For the preparation of the light chicken salad, you will need to cook the chicken breasts either steamed or on the grill, without using any type of seasoning.

Wash the Belgian endive, or the seasonal salad you prefer, and cut it into strips. Arrange the salad in a large salad bowl, season it with extra virgin olive oil, lemon juice and a pinch of salt. Add to the salad also the coarsely chopped walnuts and the cherry tomatoes cut into 4 parts.

Mix all the ingredients well and let flavor. If you like, you can also add thinly sliced avocado.

Cook the chicken in steam for a few minutes or marinate it with a little black pepper and put it on the hot plate until it is golden on both sides. Cut the chicken breasts into thin strips and add them to the salad. Mix your light chicken salad and serve with wholemeal bread.
