The chicken and cherry tomato pasta salad is perfect for celebrating the summer in style, it's a delicious one-dish meal and also ideal to take to the office or for a tasty picnic. The recipe for pasta salad with chicken and cherry tomatoes, thanks to its versatility, can be enriched with classic pesto or, if you like vegetables, you can add a soft zucchini cream simply by blending raw zucchini and adding extra virgin olive oil, salt and black pepper.

Procedure

To prepare the pasta salad with chicken and cherry tomatoes, boil the pasta in plenty of salted water. Then drain the pasta al dente and place it in a bowl, seasoning it with a drizzle of extra virgin olive oil.

In the meantime, marinate the chicken breasts in a bowl with extra virgin olive oil, freshly ground black pepper and a pinch of salt. Let the chicken marinate for 10 minutes in the refrigerator.

Prepare a light sauce by blending the basil, extra virgin olive oil and a pinch of salt in a blender. If you like, you can also add a clove of garlic.

Cut the cherry tomatoes into 4 parts after washing them thoroughly and place them in the bowl with the pasta.

Heat the grill: when it's hot, drain the chicken breasts from the marinade and cook them on both sides. Then cut the chicken fillets into strips, add them to the pasta and season everything with the basil sauce.
