Procedure
Cook the Speck BonRoll using the traditional method: in the oven for about 90 minutes.
The radicchio should be washed whole and cut into wedges about two centimeters thick: then place it on a hot grill and roast it.
When it's ready, add the balsamic vinegar and let it evaporate. Then season it with a drizzle of extra virgin olive oil, salt, and pepper.
