Description

Bringing tasty rabbit skewers to the table is easier than you think. The easy and quick recipe in a few steps will allow you to bring a delicious second course suitable for all occasions to the table. For an important lunch, try the rabbit skewers with plums and apricots.

You can prepare grilled rabbit skewers if the weather allows you to stay outdoors but also in a pan. On colder days, these skewers can also be cooked in the oven.

Rabbit skewers are great for a family lunch and especially children will appreciate, but this recipe is also suitable for informal occasions with friends for an evening party or for a dinner in front of the TV watching the match.

To prepare the rabbit skewers you can also use the thighs, but with the fillets or with the boned rabbit the whole preparation will be much faster.

Procedure

With 500g of rabbit, boneless, you will get about 4 skewers. Cut the meat into pieces of about 2 cm and let it rest after having greased it with extra virgin olive oil and a pinch of pepper.

In the meantime prepare the potatoes: peel them and cut them into chunks the same size as the rabbit. Rinse the potatoes well to get all the starch out and when the water remains clean, dry well.

In this way the potatoes will remain crispy outside and soft inside both in oven cooking and in pan. With the help of a wooden skewer, pierce the potatoes and the rabbit and thread them, alternating them, on the rosemary sprigs.

Insert in each skewer also one or two bay leaves. At this point the skewers are ready to be cooked. Preheat the oven to 200° and let the skewers cook for 45 minutes. For cooking in a pan, place the skewers on the hot pan and close with the lid, it will take about 40 minutes during which you will have to turn the skewers to brown them on all sides.

Suggestions

If instead you want to cook the skewers on the grill, place them on the hot grill turning them every 5 minutes. In this case, about 30 minutes of cooking will be needed. To be sure that the rabbit meat is well cooked, check with a fork or a skewer that the juice of the meat is transparent.
