2 tomatoes
2 zucchinis
1 eggplant
2 potatoes

In a baking dish, salt and drizzle the chicken thighs, mixing them with the tomatoes cut into rather large pieces, garlic, rosemary and half a glass of white wine. Bake for 35 minutes at 180°.

In the meantime, wash the zucchinis and eggplant and cut them into slices lengthwise. Cook them on a hot grill or griddle. As they are ready, arrange them on a tray or serving dish and season them with an emulsion obtained by mixing oil, salt, finely chopped parsley and a crushed clove of garlic.
