Description

Procedure
Boil the potatoes with the skin and when they are soft, peel them and reduce them to a puree.
Add the boiled, peeled chestnuts and pass everything through a vegetable mill. Season the puree with salt, pepper, a knob of butter and milk. Heat and set aside.
Put the AIA chicken thighs in a pan, brown them in a drizzle of extra virgin olive oil, then deglaze them with a few ladles of broth and let them cook covered for 10 minutes.
Prepare the marinade with soy sauce, honey and orange juice. Pour the marinade over the chicken thighs and let cook until complete reduction of the liquid.
Serve the chicken thighs on a mirror of puree and decorate with chives and pomegranate seeds.
