Today we propose a fabulous light and spicy single dish, suitable for those who love ethnic aromas and flavors: curry chicken strips with zucchini. This recipe is perfect for a last minute lunch or dinner and is also the ideal preparation to fill the lunchbox to take to the office in an original and alternative way.

Procedure
Boil the basmati rice in a pot, covering it with water and adding a pinch of salt and a few cloves. Wash the zucchinis, trim them and cut them into cubes, then wash the peppers, remove the seeds and internal filaments and cut them into regular cubes. Sauté the vegetables in a pan with a drizzle of oil, salt and pepper. Let the vegetables cook for a few minutes.
Toast the cashews in a pan with a few sage leaves. Cut the AIA Chicken Sottilissime into thin strips. In a pan, fry a chopped shallot in oil, add the curry and after a few moments add the chicken strips.
Adjust with salt and pepper and after a couple of minutes turn off the heat. Shell the basmati rice and fill the cup. On the rice add the vegetables and the chicken with its curry sauce.
