2 boiled potatoes

Procedure

First of all, toast the hazelnuts in a non-stick pan. At this point clean the Jerusalem artichokes and cut them into very thin slices.

Then pass them in the pan with a drop of water, extra virgin olive oil, salt and pepper until they are soft (it will only take a few minutes). Blend the Jerusalem artichokes with the potatoes adding, if necessary, a little vegetable broth.
