Small Turkey in Busto

Eviscerated Christmas turkey without offal, of reduced size.

Celebrate the Christmas period with AIA by cooking the Small Turkey in a casserole.

Preparation:
Tie the legs of the Turkey and place it in a slightly greased high-sided baking dish. Stuff the AIA small turkey inside with a bit of rosemary, some sage leaves and raw ham cut into strips; cover the outside with some slices of bacon and a few bay leaves.
Salt and bake everything. Cook over moderate heat, taking care to moisten from time to time with the cooking base. When it starts to brown, sprinkle with a glass of white wine.
When the small turkey is well cooked, remove from heat and serve.
