3 kg of AIA Turkey
200 g of AIA Norcina
2 Fresh Free-Range AIA Eggs
500 g of chestnuts
100 ml of white wine
1 bread roll
1/2 glass of milk
Butter as needed
Extra virgin olive oil

Description

If you are looking for a lavish second course, that tastes of autumn and festive days, the stuffed turkey with chestnuts is the recipe for you.

When you think of stuffed turkey, the first thing that comes to mind is the American one prepared in honor of Thanksgiving, the Thanksgiving Day, which falls on the fourth Thursday of November.
As Hollywood cinematography also teaches, in fact, among side dishes, classic mashed potatoes and sweet potatoes or dishes based on pumpkin, the main course, to be cut at the table with all the diners, cannot be missing: the turkey!

Procedure

To prepare the stuffed turkey with chestnuts start with the stuffing: cook the chestnuts for about 30 minutes in boiling water, then let them cool in a covered bowl, in order to soften them and, finally, peel them.

In the meantime, soak the bread roll in milk and remove the outer casing from the AIA Norcina sausage.
Chop it roughly and add it to the chestnuts, along with the squeezed and crumbled bread roll, the eggs, salt and pepper.
Mix the mixture and use it to stuff the AIA Turkey for about 3/4, this way you will prevent the stuffing from coming out by swelling during cooking.

Tie the meat with kitchen string, in order to close the abdominal cavity, and place it on a baking tray covered with baking paper.

Massage the meat with a knob of butter, season with a drizzle of extra virgin olive oil and white wine and cook the stuffed turkey with chestnuts for 2 hours in the oven already heated to 180 °C. If the meat should color too much, cover it with a sheet of aluminum foil.
