Procedure
First of all, trim the zucchinis and cut them into slices about 2 centimeters thick. Dip the zucchini slices in a plate with extra virgin olive oil, a pinch of salt and one of pepper. Then pass them in the breadcrumbs and place them on a baking sheet that you have lined with parchment paper. Now bake in a preheated oven at 200°C for about 15 minutes until golden, then remove them from the oven and let them cool.
Then place a slice of rolled bacon and fontina cheese, which you have previously cut into thin slices, on each slice of zucchini.
Roll up the ends and place the rolls on a baking sheet on which you have poured a drizzle of extra virgin olive oil and which you have lined with parchment paper.
Skewer your rolls with toothpicks so they don't open during cooking. Bake the rolls in the oven preheated to 200°C for about 10 minutes until the fontina cheese has melted well. Serve your zucchini rolls with bacon and cheese and enjoy!
