Stuffed Chicken with Potato and Zucchini Roesti

The stuffed chicken with potato and zucchini roesti will make you look great with all your guests and yet it is a very simple recipe.
Procedure
To prepare the Christmas stuffed chicken, start by preheating the oven to 200°. Place the chicken in a baking dish, add a glass of water and adjust with salt. Start cooking and after about 45 minutes, sprinkle the chicken with a scant glass of white wine. The stuffed chicken will be ready after another 45 minutes approximately.
While the chicken is cooking, prepare the potato and zucchini roesti: peel the potatoes, wash them well then grate them and pour them into a bowl. Then trim, wash and grate the zucchini and mix them with the potatoes. Adjust with salt and freshly ground pepper and mix the mixture.
Heat a pan on low heat with some EVO oil and pour a spoonful of potatoes and zucchini pressing them with a spatula to give them the shape of a pancake. Turn the roesti so that both sides are well browned.
Let them dry on kitchen paper and serve them with the stuffed chicken.
