1 pack of AIA Classic Wudy
280 g of spelt
150 g of basil
60 g of grated Parmigiano Reggiano
30 g of pine nuts
250 g of cherry tomatoes (yellow
red and green)
1 untreated lemon
Extra virgin olive oil
Salt

Description

The stars of the summer are fresh and quick to prepare dishes. Rice salads, cold pasta and spelt salads are very popular in summer lunchboxes, in beach lunches and on the tables of dinners by the sea. Here is a fresh spelt salad with pesto, Wudy, green beans and cherry tomatoes that will win you over from the first taste!

Boil the spelt in plenty of salted boiling water, then drain it, season it with a drizzle of oil and let it cool.Trim the green beans and cut them into pieces, then boil them in salted boiling water until they are cooked, but still crunchy. Sauté the green beans with a drizzle of oil and a clove of garlic.

Then add the Wudy cut into slices. Grate the Parmesan. In the mixer glass put the basil leaves, the pine nuts, the grated cheese, the oil and a pinch of salt, then blend intermittently until you get a creamy pesto that you will transfer to the refrigerator until the time of plating.

Cut the cherry tomatoes in half and get the lemon zest. Add to the spelt the green beans with the Wudy and decorate with the pesto and lemon zest.
