Roast Chicken with Lemon and Herbs

Description
The roast chicken with lemon and herbs is a second course with a delicate taste that will whet your appetite.
Procedure
Place the whole chicken in a baking dish.
Fill the cavity with two slightly crushed unpeeled garlic cloves, a couple of rosemary sprigs and some sage leaves.
Separately, finely chop the herbs.
Squeeze a lemon and add plenty of olive oil to the juice.
Tie the chicken's legs with kitchen twine so that it keeps its shape during cooking.
Brush the chicken with the lemon and oil mixture, massage it and sprinkle it with the chopped herbs. Adjust a bit of salt and pepper.
Cook in a preheated oven at 190° for about an hour and a half.
During cooking, occasionally take a few tablespoons of liquid from the bottom of the cooking and pour it over the chicken. The chicken will be perfectly cooked when, by inserting a skewer or a toothpick into the thigh, no pink liquid comes out.
Once cooking is complete, remove the roast chicken and serve it.
