1 onion
1 sachet of saffron
1 teaspoon of cinnamon
fresh ginger
2 lemons
300 g of Gaeta olives
50 g of butter
2 cloves of garlic
Coriander
Parsley
Rosemary

Description

The oven-baked lemon chicken - not to be confused with the lemon chicken found in Chinese restaurants - is a delicacy that you can learn to cook without much difficulty and that will allow you to have the recipe suitable for various occasions.

The oven-baked chicken is the most loved by children, serve it as a second course for the Sunday lunch and also for a more or less informal dinner

In case the lemon chicken is left over you can use it as a lunch in the office or to add it to the salad and eat it during the outdoor picnic. 

Procedure

To prepare the lemon chicken take the AIA Gran Galà Chicken, wash it and dry it well with kitchen paper. Then let the butter soften at room temperature. Also turn on the oven and heat it to 180°C.

In a mixer grind the onion with the garlic and the sachet of saffron. Then add the coriander, parsley and salt. Separately, grate by hand 4 centimeters of peeled ginger that will be added to the rest of the spices. When the butter has softened work it with a teaspoon to make it a cream.

The butter will also be added to the rest of the ingredients and worked in the mixer. This spiced cream will be spread on the chicken all over the surface and also inside.

With a string tie the wings and legs of the chicken. At this point place the chicken in a baking dish and cook it for 50 minutes at 180°C. In the meantime, wash one of the two lemons very well and cut it into cubes, with all the peel.

The other lemon will be squeezed. Pour the juice over the chicken and arrange the lemon cubes and olives around the meat in the baking dish. Also add some sprigs of rosemary. Raise the oven to 200°C and cook for another 25 minutes.
