Description

The Devil's Chicken is a much-loved Italian recipe: it has many variations, depending on the regions in which it is served. For this reason, it does not have a single and precise preparation and is therefore the ideal dish for those who have a lot of imagination in the kitchen and want to prepare a rich and tasty second course.
Even the same name has an unconfirmed origin. However, it is thought that its name derives from the particular spicy taste, given by the addition of chili and various herbs that make the meat even more flavorful.
The cooking of the Devil's Chicken can therefore take place in different ways: for example, in the Roman version, which is the one we will illustrate, the chicken is crushed by a weight against the pan, in order to adhere better and create the crispy crust.

Procedure

To cook the Devil's Chicken start by preparing the ingredients. Take your AIA Chicken and cut it from top to bottom along the back; you can also cut it all along the breast, the important thing is that you can then crush it and make it adhere well to the pan.

Flatten the chicken on a work surface and moisten the meat with two tablespoons of olive oil, to which you have previously added chili powder; sprinkle it with salt and pepper, and let it rest, so it can absorb the flavors well. You can also add herbs to further flavor the meat, but without exaggerating, so as not to overshadow its taste.

Now pour another 3 tablespoons of olive oil into a non-stick pan and place the chicken with the split part facing down. Cover the chicken with a lid and with a weight to keep it crushed during cooking.

Keep the chicken in that position and cook it for 5 minutes over high but not very high heat, browning it, without burning the skin.

Turn the chicken on the other side and repeat the operation 4-5 more times until the chicken is cooked, it will take about an hour.
