Procedure
Boil the asparagus in salted boiling water for 7/8 minutes so that they remain crunchy, then drain them and immerse them in cold water and ice. With this procedure, the asparagus will maintain a beautiful bright green color.
Lay out the chicken slices on a surface, sprinkle them with grated cheese and add a slice of fontina. Put two asparagus in the center and close the chicken to get the classic roll shape.
Tie the rolls with kitchen string and brown them in a pan with a drizzle of extra virgin olive oil. Deglaze the chicken and asparagus rolls with the wine, adjust the salt and pepper and cook for 10 minutes. Arrange the rolls on a nice plate, add the basil leaves and let them cool.
