Massage the chicken with the butter all over the surface. Bake the chicken with a drizzle of oil and the aromatic herbs for 20 minutes at 180°C.

Take the chicken out of the oven and deglaze it with the brandy, add the citrus fruits cut into slices and the peeled and wedged purple potatoes. Bake again for 40 minutes.
