Procedure
Combine the lemon juice and orange juice. In a non-stick pan, heat a drizzle of oil, add the Thin AIA and deglaze with the citrus juice.
Season with a pinch of salt and a grind of pepper. Grate the orange and lemon zest, sauté it in the pan for a few seconds then serve the chicken with the sauce and dill.
Fry a very fine chop of shallot in extra virgin olive oil, add the peas and adjust with salt and pepper. When cooked, add the mint leaves. Boil the basmati rice in plenty of salted boiling water. Cut the pineapple. Finally prepare the aromatic water by adding fresh mint leaves.
