400 gr of AIA chicken breast
250 gr of green beans
250 gr of cherry tomatoes
Extra virgin olive oil
2 cloves of garlic


The chicken, tomato and green bean salad is an easy and quick recipe to prepare, perfect to enjoy in the summer when you want something light and tasty. The combination of fresh seasonal ingredients such as tomatoes, green beans and chicken creates a colorful dish with an unmistakable taste. Ideal for staying in shape, this recipe is perfect for filling the summer lunchbox but also as a dish to serve during a dinner in the garden.

After washing the green beans, remove the ends and boil them for about 15 minutes in a pot with plenty of salted water. In the meantime, wash the cherry tomatoes, cut them in half and put them in a colander, adding a pinch of salt to make them lose the serum (stir them occasionally). Once the green beans are cooked, cut them into pieces and put them in a bowl.


Add the cherry tomatoes and season with half of the oil. Mix well and then cut the chicken into cubes. In a non-stick pan pour the rest of the oil and put the peeled garlic which you will brown for a few minutes and then remove from the pan.


Add the chicken and cook over high heat for about 5 minutes, adding a pinch of salt and pepper. Once cooked, put the chicken and the cooking base in a bowl and let it cool.


Now add the green beans and the tomatoes and mix well.
