200 g of red rice

2 tablespoons of white yogurt
Half a lime
Extra virgin olive oil

Description

If you love recipes with Asian influences like ramen, lemon chicken and Cantonese rice, these turkey bresaola and red rice rolls will win you over.

Perfect for a aperitif or for a fusion dinner, the rice paper rolls are very simple to prepare: here's how to do it!

Procedure

Boil the red rice in salted boiling water for 35-40 minutes, then drain it and season it with a drizzle of oil.
Grill the asparagus after peeling them at the bottom to remove the most fibrous part.

Prepare the sauce by mixing the yogurt with the turmeric and with the lime juice, then adjust with salt and pepper.

Soften the rice paper in cold water until it is soft and manageable, it will take a few moments.

Lay out a sheet of rice paper on a surface, cover with a lettuce leaf, add the red rice, a couple of asparagus, the seeds, two slices of rolled bresaola and season with the turmeric sauce.

Roll everything up to form a roll and repeat until all the ingredients are used up.
