Procedure
After having cleaned it from the peel and internal filaments, cut the pumpkin into cubes and brown it in a pan together with a drizzle of extra virgin olive oil, a clove of garlic and a sprig of rosemary. After a few minutes, add a glass of water and cook until the pulp of the pumpkin is soft.
Then blend the pumpkin until you get a smooth cream. To eliminate all possible lumps, pass the pumpkin cream through a sieve. You will get an even more enveloping and shiny sauce.
Cook the AIA Classic BonRoll in oven or in pan, then cut it into slices. Prepare the salad (or arugula to taste), add the walnut kernels and the slices of crispy apple. Dress the salad with extra virgin olive oil, salt, pepper and lemon juice.
