Almond Chicken, the Ethnic Recipe

Together with the curry chicken of Indian origin, prepared with spices and turmeric, the almond chicken is one of the most appreciated ethnic recipes based on chicken. Like the lemon chicken, the almond chicken also finds its origins in Chinese cuisine, but thanks to its unbeatable taste, it has managed to conquer the tables of all Italy. Procedure
Cut the chicken into pieces or strips and dust it all over the surface. To do this, you can put flour and chicken in a freezer bag, close the opening tightly with one hand and shake the bag. Put the floured chicken on a plate.
Peel and finely chop the shallot and sauté it in the wok with a drizzle of oil and with finely grated ginger. Toast the almonds in a non-stick pan for a couple of minutes being careful not to burn them. Add the chicken to the wok, adjust the salt and stir-fry over high heat for about 10 minutes.
Deglaze the chicken with the soy sauce and a couple of tablespoons of boiling water, then add the almonds and let cook for another 3-4 minutes. Serve the almond chicken with plain basmati rice.
