Premium Christmas turkey, eviscerated without giblets.

Celebrate the holiday season with AIA by cooking the small turkey in a saucepan.

Preparation:
Tie the turkey legs and place it in a slightly greased high-sided baking tray.
Stuff the AIA turkey inside with a little rosemary, a few sage leaves, and raw ham cut into strips; cover the outside with a few slices of pancetta and some bay leaves.
Season with salt and bake everything. Cook over moderate heat, making sure to baste from time to time with the cooking juices.
When it starts to brown, pour over a glass of white wine. When the turkey is fully cooked, remove from the heat and serve.
