Peeling and cutting vegetables

Let's start with the peeling and cutting of the vegetables. Prepare the onion by cutting it finely, peel and cut the carrot and, finally, take care of the celery, cutting it into pieces.

Preparing the bites

Let's move on to the preparation of the bites. Use the AIA turkey thigh in slices and create bites of the size you prefer. Flour the pieces of meat on a plate, being careful to remove the excess flour, and set them aside.

Cooking vegetables

Now let's take care of the cooking of the vegetables. In a pan, heat some extra virgin olive oil and add the onion that we previously cut. Add the other vegetables and adjust with salt. Let it brown for about 5-10 minutes over medium-low heat.

Cooking the bites

It's time to cook the bites. Add them to the pan with the vegetables and brown them over high heat, so as to seal them on all sides and make them golden. Adjust with salt and pepper, and deglaze with white wine, letting the alcohol evaporate. At this point, introduce the bay leaves and some sprigs of rosemary. When the meat is well browned, add the tomato pulp and half a glass of water. Continue cooking covered with the lid for about 30 minutes. During cooking, make sure there is always enough water and adjust with salt and pepper if necessary.

Plating

Finally, we can proceed to the plating. Serve the hot bites and decorate with a little fresh rosemary. A drizzle of raw oil will finally give that extra touch to the dish.
