(Serves 4 people)

Preparation:
cut the eggplant into pieces, salt them and let them drain for 1 hour. Brown the rabbit in oil and butter, add salt and pepper.
Dry the eggplant with a cloth and, when the rabbit is well browned, add them along with the garlic.
Let it flavor for a few minutes, then pour in the tomato and cook on low heat for 45 minutes. If necessary, add a little water from time to time.
