Ingredients

2 packages of AIA rabbit parts
400 grams of light beer
500 grams of cherry tomatoes
1 carrot
1 celery stalk
5 grams of fennel seeds
1 clove of garlic
50 grams of white onions
1 sprig of rosemary
3 sage leaves
About twenty grains of black pepper
4 tablespoons of extra virgin olive oil
50 grams of sugar

Description

All the softness of rabbit meat in a tasty beer marinade. Follow the steps and prepare this recipe with us!

Procedure

Prepare the vegetables: peel the carrot, remove the strings from the celery, peel the onion and the garlic clove.

Cut everything into coarse pieces, then blend them together with sage and rosemary.

Put the rabbit in a bowl and season it with the mixture of vegetables and herbs. Flavor with the pepper, fennel seeds and beer.

Cover with a food film and let it marinate in the fridge for a couple of hours.

In the meantime, cut the cherry tomatoes in half and arrange them on baking paper in a baking dish, with the cut side up. Season with oil, oregano, salt and sugar.

Cook the tomatoes in the preheated oven at 90 degrees for about an hour and a quarter, until they have caramelized.

In a non-stick pan with a drizzle of oil, brown the rabbit on both sides over high heat.

As the rabbit cooks, moisten it with spoonfuls of marinade, adding more as it is absorbed, then adjust the salt.
