1 package of AIA Boneless Rabbit
200 g of pitted dried plums
2 apricots
1 clove of garlic
1 bay leaf
Shallot
Extra virgin olive oil
Salt
Pepper
White wine
Sesame seeds

Description

Preparing the rabbit skewers with prunes and apricots is quite simple, but you will look like great chefs bringing this dish with balanced and very special flavors to the table.

Take the boneless rabbit and cut it into chunks all the same size while in a container you will rehydrate the plums in white wine. It will take about 20 minutes

The next step to prepare the rabbit skewers with prunes and apricots is to wash the apricots very well, cut them in half and remove the pit and then cut one into small chunks and the other into larger pieces.

In a hot pan, wilt the shallot with a drizzle of oil and in the meantime prepare the skewers alternating the rabbit chunks with the plums squeezed from the wine and with the larger cut apricots. Arrange the skewers in the pan with the shallot.

When the cooking is almost finished, add the apricots so that they caramelize with the shallot. Add a little water so that a rather thick subject forms. Turn off and serve hot.
