1 package of rabbit in parts
350 g of champignon mushrooms
100 g of black olives
100 g of green olives
3 cloves of garlic
1 bay leaf
1 glass of still white wine
Sage
thyme
rosemary
marjoram to taste
20 ml of extra virgin olive oil
1 glass of water
Chili pepper to taste

Description

To prepare a tasty, fragrant and light seasonal dish, just combine the recipe for rabbit with mushrooms and that of rabbit with Mediterranean herbs.

This dish based on white meat is suitable for both Sunday lunch and a midweek dinner and is different from the usual rabbit alla cacciatora.

Procedure

To prepare the rabbit with mushrooms and Mediterranean herbs, heat the oil in a large pan with two peeled and slightly crushed garlic cloves.
Rinse the pieces of rabbit under running water and dry them with kitchen paper before placing them in the pot and browning them on all sides.

Add the olives and herbs and cook for a few minutes, before deglazing with the white wine (you can also use broth if you prefer).
Let the wine evaporate and also pour a glass of hot water into the pan.
Adjust with salt and pepper, season with chili pepper and lower the heat.

Cover with the lid and continue cooking for about an hour and a half on a gentle heat: occasionally remember to turn the rabbit with aromatic herbs. If the cooking base should dry out too much, add more water or broth, making sure the liquid is very hot.

In the meantime, take care of the mushrooms: clean them, slice them and brown them in a pan with oil, a clove of garlic and a pinch of chili pepper.
Add the mushrooms to the rabbit and cook together for the last ten minutes, so that the flavors blend together, before serving hot.
