150 g Cherry Tomatoes
1 Leek
120 g Greek Yogurt
Lemon Juice
1 teaspoon of Honey

Description

Savor all the taste of Spring with a salad based on chicken strips, asparagus and cherry tomatoes, seasoned with a delicious yogurt sauce. Preparing it is simple and the result will be more than satisfactory, for the eyes but especially for the palate!

Procedure

Clean and cut the end part of the asparagus. Wash the cherry tomatoes and cut them in half. Finally, clean and slice the leek.

Now put the vegetables in a casserole, drizzle them with olive oil and season them with salt, pepper and spices. Add a teaspoon of honey, mix and cook for about 25 minutes in a ventilated oven at 180°.

In the meantime, sauté the chicken strips in a hot pan with oil, garlic and ginger. Cook first on high heat and, after a few minutes, on medium heat.

After 10 minutes, add salt and pepper, and continue cooking (another 10 minutes approximately) until the strips are well cooked and slightly browned. Turn off the heat and set aside.

Now prepare the Yogurt sauce. Start by combining the Greek yogurt, a little lemon juice, the grated fresh ginger, salt and pepper. Take the vegetables out of the oven, heat the chicken strips and get ready to plate.

Place your vegetables on a flat plate, add a nice spoonful of yogurt sauce and finally the strips.
