100 g of pearled barley
50 g carrots
50 g onions
50 g celery
1 dl of vegetable broth
50 ml of extra virgin olive oil
Rosemary to taste
Salt

Description

A nice variant of risotto or even the usual tomato pasta is barley. Have you ever tried saffron orzotto? The recipe is very simple and quick!

To enrich the orzotto, choose the High Quality Cooked Ham AeQuilibrium by AIA and make warm bundles filled with barley. The saffron orzotto is what it takes to make your guests feel at home, especially in the colder months of the year. This recipe is so delicious that you could also use it for lunch at the office. You will make a great impression with all your colleagues.

Procedure

To prepare the saffron orzotto first soak the barley for 4 hours. Then wash and clean the carrot and cut it into small cubes.

Also cut into small pieces the stalk of a celery and the onion along with a clove of garlic.

Brown everything in a pan with a little EVO oil, add some rosemary and fresh sage.

When the vegetables are all wilted add the barley and moisten with two ladles of vegetable broth.

Let it cook for about half an hour making sure it doesn't dry out too much.

When the barley is cooked you can add a sachet of saffron and mix well.
