240 g of salad rice
3 chicken breasts
2 carrots
1 zucchini
1 large pepper
Very fine chopped of aromatic herbs of choice
Extra virgin olive oil
1 clove of garlic
1 sprig of rosemary


The rice salad with chicken and vegetables will refresh your entire summer with a touch of magical taste. The recipe for rice salad with chicken, is very simple to make and in no time you will have brought to the table a dish that you will never get tired of and that will also satisfy the most demanding palates.

In the preparation of your rice salad with chicken, you can choose to grill the chicken or steam it, in both cases you will get a light and tasty recipe. On the hottest days you can enrich your rice salad also with small pieces of melon, the sweet and salty contrast will be a winning move.

Here's how to prepare the rice salad with chicken and vegetables that you won't be able to give up anymore!



Marinate the chicken breasts in a bowl with extra virgin olive oil, salt, black pepper and a chopped of aromatic herbs. Let the meat marinate for at least 1 hour in the refrigerator.


In the meantime boil the rice in plenty of salted water, drain it al dente, season it with a drizzle of extra virgin olive oil and let it cool. If you like ethnic flavors, you can put in the rice cooking water a teaspoon of curry.


Peel the carrots and cut them into cubes, remove the seeds and filaments of the peppers and cut them first into strips and then into cubes. Cut the zucchini into cubes after washing them thoroughly.


At this point you can proceed in two ways: if you love crunchy vegetables, you can add them raw to your rice salad with chicken, if instead you prefer softer textures, sauté them in a pan for 10 minutes with a drizzle of extra virgin olive oil, a clove of garlic and a sprig of rosemary.


Add the vegetables to the rice and adjust with salt and pepper. Drain the chicken from the marinade and cook it on the griddle on both sides. Cut the chicken into cubes or strips and add it to the rice salad.
