Procedure

Start by preparing the accompanying yogurt sauce: in a large bowl pour the yogurt, add a pinch of salt and two teaspoons of lemon juice. Mix everything well with a whisk.

Chop the garlic, basil, mint and chili pepper, and mix them together to obtain a homogeneous mixture. Pour the just obtained mixture into the bowl with the yogurt, add the oil in a thin stream and mix until you get a creamy sauce. Put the yogurt sauce in the fridge.

In a pot bring plenty of salted water to a boil and here boil the new potatoes with the skin.

In the meantime, in a non-stick pan, heat the bacon slices for a few minutes and then set them aside once they are golden. When the potatoes are cooked, drain them and wrap each potato with a slice of bacon, seasoning with salt, pepper and fresh thyme.

You can fix the potato rolls with toothpicks to pair them up.

In a baking tray lined with baking paper, place the potato skewers with bacon and heat in a preheated oven at 180°C for about 15 minutes. Remove from the oven and serve after letting it cool for a few minutes with the yogurt sauce.
