10 Medium AIA Pastagialla free-range eggs
150 g of sugar
500 ml of liquid cream
250 g of puff pastry
Flour as needed

Description

The pasteis de nata are sweets typical Portuguese made of puff pastry and cream, perfect to satisfy the sweet tooth at any time of the day.

If you have never tried them, you absolutely must discover the original recipe and make it at home: follow the steps to the letter and in a few minutes you will have delicious cream pastries to offer to your guests or to keep all for yourself!

So here are the ingredients and the procedure to create the famous Portuguese pasteis de nata.

Procedure

Take the ready-made puff pastry and cut out 6 circles, then use them to cover the muffin cups to create the base of your pasteis de nata. Sprinkle them with a little flour and set them aside.

Now prepare the cream: pour in a steel bowl all the yolks eliminating the egg whites, also pour the sugar and mix with a whisk; immerse the bowl in a pot with a little water on low heat and proceed with cooking in a bain-marie.

Continuing to stir, add the cream: as soon as the cream has reached 80°C (you will need to use a kitchen thermometer for sweets) turn off, remove from heat and let it cool down.

Then pour the cream into each muffin cup up to the brim, slightly fold in the edges of the puff pastry and bake at 220°C for about 15 minutes.
