1 pack of 4 Fresh Eggs
300 g of flour
150 g of granulated sugar
150 g of butter
Half a lemon

Description

On a pastry board put the flour making a fountain: inside it pour the sugar, the grated zest of half a lemon and the salt. Later cut the butter into small pieces and pour it where all the other ingredients are.

The precaution you absolutely must have is to use the cold butter from the fridge and not at room temperature: this is the real secret for a perfect shortcrust pastry! Start working the mixture using only the tips of your fingers, then add two yolks and an egg and continue to mix all the ingredients forcefully until you create a homogeneous dough.

Once the dough is formed, wrap it in cling film and let it rest in the refrigerator for thirty minutes. After this time your shortcrust pastry will be perfect to be used in excellent sweet recipes.
