250 g of Paesana Luganega
1 cauliflower
320 g of dry short pasta
1 chili pepper
100 g of grated Parmigiano Reggiano
Extra virgin olive oil

Procedure

Clean the cauliflower by obtaining the florets, wash them and put them in a large pot filled with water halfway. Add a pinch of coarse salt and bring to a boil.

In the meantime, crumble the Paesana Luganega AIA sausage and brown it in a pan until it is crispy on the outside. Also add a few slices of chili pepper.

When the cauliflowers are soft and the water is boiling, add the pasta. Cook and drain the pasta al dente together with the cauliflowers, then season everything with the spicy sausage, a drizzle of oil, pepper and plenty of grated cheese.
