150 g of AIA Chicken and Turkey Sausages
200 g of pasta
250 g of already cleaned fresh broad beans
1 spring onion
100 g of pecorino cheese
Some mint leaves
Extra virgin olive oil
Salt
Pepper

Description

Who says spring says broad beans, a legume rich in properties and taste! If you are lovers of first courses and you like seasonal legumes, the pasta with broad beans and chicken and turkey sausage, will conquer you!

Procedure

First of all, blanch the broad beans in salted water for a couple of minutes, then drain them in cold water and remove the skin. Cut the spring onion into slices and lightly fry it in a pan with extra virgin olive oil.

Add the chicken and turkey sausage cut into pieces and brown it well. Adjust with pepper and add the broad beans. Add a pinch of salt. Boil the pasta in plenty of boiling salted water and drain it al dente. Keep a ladle of pasta cooking water.

Transfer the pasta to the pan with the seasoning, add a couple of tablespoons of cooking water and mix all the ingredients well. Put the pasta with broad beans on the plates and decorate with pecorino shavings and a couple of fresh mint leaves!
