5 zucchini
2 cloves of garlic
1 pack of cooking cream

The pasta with zucchini and chicken breast is a very simple dish to prepare and great for many occasions. It is a recipe that can be elaborated in different ways; from these ingredients, in fact, we can make a zucchini and chicken breast ragù, or, for a more summery version, we can cut the meat into strips and cook a cold pasta with zucchini and chicken breast. We are in the middle of the beautiful season and we are facing very hot days, so we will consider the second option, preferring a fresher and lighter dish.

The pasta with zucchini and chicken breast is ideal to serve during a garden dinner, but also to bring to the office to enjoy during lunch break a tasty and light lunch box. Here is the recipe for pasta with zucchini and chicken breast!



To prepare the recipe for pasta with zucchini and chicken breast, take the slices of meat, cut them into strips and put them in a non-stick pan with a drizzle of oil. Turn on the heat and cook for about 8-10 minutes, turning the slices and making sure they cook perfectly.


To soften the meat even more you can also add a pinch of flour during cooking. If you prefer an even lighter cooking, you can cook the chicken breasts in the oven for 15 minutes. Season the chicken strips with salt and pepper.


Now take the zucchini, wash them and with the vegetable peeler cut them, creating vertical strips. Discard the central part of the zucchini with the seeds. Then sauté the zucchini in a pan with a drizzle of oil. In the meantime, bring a pot of water to a boil and cook the penne


Now add to the zucchini the cooking creamminced garlic, the curry, a pinch of salt and the chicken breast strips. Drain the pasta and season, adding at the end also the parmesan and the leaves of fresh basil.
